As far as I’m concerned, Sundays are usually a bust and I don’t particularly like them. However, today was a productive game-changer– at least foodie-wise!
I decided to go with the triple berry smoothie for breakfast and OH, it was the perfect color and taste! Honestly, isn’t that the most wonderful shade of purple for a berry smoothie? I think so!
After my smoothie, I went grocery shopping, which I love to do more than almost anything. I wish I could grocery shop all the time and not spend a lot of money…or even get paid to do it! Ah, a girl can dream, right? :)
So I broke out my trusty shopping basket that I keep forgetting I have! I love this thing– it was a Christmas gift from my mom a couple years ago and it’s wonderful and handy for shopping. I sometimes need a bigger basket…but it was perfect for today’s haul
Y’all might think me a bit crazy, but CHECK OUT MY HUGE CASHEW STASH! It cost me a pretty penny, but I don’t regret it for a second!
I love love love cashews– they’re my favorite nut and they’re so versatile! Plus I’ve been cooking and baking with them a lot lately and I needed to replenish my stock. I’m dying to try some cashew butter so maybe this week that will happen….but for now, these babies will have home in the pantry among the other nuts and fruit
As I mentioned, my brother came over for lunch. I decided to try a couple of recipes I’ve been wanting to try: baked chicken wings and cauliflower mashed “potatoes”
Now, my brother is a meat and potatoes kinda guy. For life. But he’s recently been told he needs to lower his cholesterol so I’ve been trying to wean him off all the crap he eats and hopefully get him to eat healthier when he comes over here, at least a little bit! I didn’t want to freak him out with something weird and super-paleo so I went with a compromise: paleo for me, “meat and potatoes” for him ;)
So here’s how this cooking adventure went down…
I tend be ambitious in the kitchen, to be frank. This recipe combo was a little more than I had intended to take on, but hey, I did it and it came out pretty dang good! (We’ll just pretend I didn’t smoke out the kitchen a little bit in the process. I can blame my mother for leaving the oven dirty ;) )
Live and learn is how I generally do things and live and learn I did today! I picked up drumsticks instead of drumettes for the chicken wings– yeah, NOT the same thing, so I know now. Drumsticks come in packs of like 5 huge pieces of chicken, versus the 25 or so pieces of drumettes I was expecting, but oh well.
Anyways, I used this recipe as a base and paleo-fied it to suit my needs. So here’s how I did it:
Kickin Chicken Drumstickin Baked Wings
For the sauce
1 tablespoon coconut oil, melted
1/4 tablespoon chili powder
1/4 tablespoon cayenne pepper
1/4 salt (I prefer sea salt, but kosher salt works just as well
1/4 cup hot sauce (I use Frank’s, as does the original recipe)
Combine above ingredients in a medium bowl. Whisk in hot sauce; keep warm– I popped mine in the microwave towards the end of the chicken baking process so it was warm for tossing.
For the chicken:
25-30 / about 2.5 lbs Chicken drumettes (or drumsticks if you make the mistake like me or just want bigger meatier portions!)
1 tablespoon coconut oil, melted
Salt and pepper to taste
Toss drumettes in hot sauce and serve immediately– no need to bake again once the sauce is on the wings. Enjoy!
I think the wings turned out AWESOME! And we like things spicy so I kicked up the spice ratios a bit for some more heat.
I made garlic and herb mashed cauliflower on the side from this recipe
It was the first time I’d ever tackled the mashed cauliflower, even though last week’s riced cauliflower came out closer to mashed. As a first try, it wasn’t bad– but it lacked a bit in flavor. So my brother and I drizzled the extra buffalo sauce on the caulimash and MMM that was the ticket!!
Today was quite an adventure in the kitchen thusfar. This is why I’m glad I have weekends!
Thinking about whipping up a batch of blueberry coconut butter that I found a recipe for last night, maybe later this afternoon. And dinner will probably be some concoction I throw together of ground turkey and sauce, some sort of paleo-bolognese if you will. Easily one of my favorite foods and easy to throw together
My belly is happy right now! Time to relax with a cup of hot water with lemon and some DVRed tv :)
